Zucchini Chickpea Bolognese

Ingredients

  • 2 tablespoons olive oil
  • 1 medium carrot, peeled & diced
  • 1 celery stick, finely diced
  • 1 small zucchini, thinly sliced
  • ½ cup water
  • 410g can ARDMONA DUO™ Chopped Tomatoes with Bolognese
  • 400g can Chickpeas, drained & rinsed
  • Salt and freshly ground pepper
  • Shaved Parmesan cheese, to serve
  • 250g dried Fettuccine

Method

  1. Cook fettuccine in a large saucepan of boiling water according to packet directions. Drain.
  2. Heat oil in a saucepan, cook carrots, celery, zucchini for 5 minutes.
  3. Add water, ARDMONA DUO™ Chopped Tomatoes with Bolognese and chickpeas. Simmer further 10 minutes or until sauce thickens. Season to taste with salt and pepper.
  4. Toss pasta through sauce. Top with Parmesan cheese.
