Zucchini Chickpea Bolognese
Ingredients
- 2 tablespoons olive oil
- 1 medium carrot, peeled & diced
- 1 celery stick, finely diced
- 1 small zucchini, thinly sliced
- ½ cup water
- 410g can ARDMONA
DUO™ Chopped Tomatoes with Bolognese
- 400g can Chickpeas, drained & rinsed
- Salt and freshly ground pepper
- Shaved Parmesan cheese, to serve
- 250g dried Fettuccine
Method
- Cook fettuccine in a large saucepan of boiling water according to packet directions. Drain.
- Heat oil in a saucepan, cook carrots, celery, zucchini for 5 minutes.
- Add water, ARDMONA
DUO™ Chopped Tomatoes with Bolognese and chickpeas. Simmer further 10 minutes or until sauce thickens. Season to taste with salt and pepper.
- Toss pasta through sauce. Top with Parmesan cheese.
